Ingredients (serves 4)1kg (2½ lb) lean minced pork
100g (4 oz.) chopped onions
100g (4 oz.) sweetcorn
2 chopped red peppers
1 chopped green pepper
1 chopped yellow pepper
50g (2 oz.) tomato puree
4 tbls olive oil
500 ml pork/chicken stock
50g (2 oz.) cornflour
½ teaspoon chilli powder
Method1 In a large pan, fry the pork in the olive oil until nicely browned.
2 Add peppers, onions, chilli powder and tomato puree, fry for a further minute.
3 Gradually add the stock, bring to the boil and simmer gently for 30 minutes.
4 Add sweetcorn and simmer for a further 10 minutes.
5 Prior to serving, thicken with the cornflour mixed in a little water.
Serving SuggestionServe with rice and a mixed crisp salad. Alternatively, serve with rice and tortilla chips.
