Italian Pork Stew

2 large boneless loin pork chops, cubed1 400g (15-oz.) can chopped tomatoes
1 400g (15 oz.) cans chicken broth
1 400g (15-oz.) can cannellini or great Northern beans, drained
2 tbls. dried minced onion (or finely chopped fresh)
200g (8 oz.) fresh shredded spinach leaves (frozen will do)
50g (2 oz.) fresh shredded basil leaves (dried will do)
Grated Parmesan cheese
Olive oil
Method
1 In a large pan, fry the pork in a little olive oil until nicely browned2 Add tomatoes, chicken broth, onion and beans and bring to the boil
3 Lower heat, cover and simmer for 15 minutes
4 Stir in the spinach and cook for 2 more minutes
5 Serve and top with grated Parmesan cheese
