Italian Pork Stew


Ingredients (serves 4)

2 large boneless loin pork chops, cubed
1 400g (15-oz.) can chopped tomatoes
1 400g (15 oz.) cans chicken broth
1 400g (15-oz.) can cannellini or great Northern beans, drained
2 tbls. dried minced onion (or finely chopped fresh)
200g (8 oz.) fresh shredded spinach leaves (frozen will do)
50g (2 oz.) fresh shredded basil leaves (dried will do)
Grated Parmesan cheese
Olive oil


1 In a large pan, fry the pork in a little olive oil until nicely browned

2 Add tomatoes, chicken broth, onion and beans and bring to the boil

3 Lower heat, cover and simmer for 15 minutes

4 Stir in the spinach and cook for 2 more minutes

5 Serve and top with grated Parmesan cheese

Serving Suggestion

Serve on a bed of fresh Italian pasta of choice, with green salad and Italian dressing. Cook pasta following instructions, then toss in freshly chopped chives and a little olive oil.
