La Lauragaise joins Larnaudie CA Holding

On 1 August 2014, cooked meals (mainly PGI Castenaudary cassoulet) and Toulouse sausages produced at La Lauragaise in Castenaudary have been taken over by the d’Espous family, major shareholder of CA Traiteur & Salaisons and Larnaudie. Larnaudie specialises in 'Foie Gras' and supplies French supermarkets. La Lauragaise will change name and will be named Occitane de Plats Cuisinés (OPC) but the old brand will be maintained for some customers although the activity will focus on own-brand products.

Prince of Paris

The last French Meat Academy general assembly took all members present to visit the only ham processing plant in Paris (12 staff for 500 hams per week). The main production is Paris ham sold under the brand Prince de Paris, to butchers and delicatessens. Slowly cooked (9 hours in steam oven) and carefully salted (injected into the arteries) this traditional charcuterie product is sold to top butchers (Hugo Desnoyer and Yves-Marie Le Bourdonnec) and top chefs (Yannick Alleno). The owner of the company Yves Le Guel invested €200,000 in new equipment and is planning to double the size of the small factory.
