Print This Page Four new cuts of pork introduced; will make debut later this year
IOWA — Along with the announcement that the pork that Americans eat has gotten leaner, consumers can look for four new cuts of the other white meat to add to their menus.The four cuts – pork breast, petite tender, cap steak and pocket roast – were rolled out during a media luncheon at the World Pork Expo. The four new cuts, three of which have yet to be released to the public for sale, are meant to help the domestic pork industry make a run at the poultry market.
“Consumer research tells us that consumers say they don’t have a bag of frozen pork in their freezer like they have chicken so we’re really trying to position pork as a good substitute for all the things you can do with chicken breast,” Becca Hendricks, strategic marketing manager for the pork checkoff, told a group of assembled media as they sampled the four new cuts. “All of these really fit the bill.”
The four cuts will be introduced to the packer/processor in July and after that, the cuts will be introduced to the food service industry. “We’re working with foodservice first to get these on menus and to get recognition,” Hendricks said. “Then hopefully consumers will see it on menus and look for it in their meat cases.”
