JSR supply breeding pigs for Italian Parma Ham market
UK - A co-operative of 4,000 members in Northern Italy have signed an agreement to produce pigs for Parma Ham using the genetics of international pig breeding company, JSR Genetics.
Progeo Mangimi, one of the largest Italian farming co-operatives, has purchased grandparent gilts from JSR Genetics' nucleus herds to supply its own multiplier herd in Italy.
Because the Parma ham market targets a liveweight carcass of 165 kg+ and 23mm of fat on the ham, the animal requires a large skeletal structure to produce the leg size and shape required.
For the Parma ham to be carved into its characteristically thin strips the product must also have low levels of intramuscular fat.
JSR Genetics have formed a library of high quality products, which means that they have been able to identify suitable lines to achieve the breeding goal for this specialised market. Close liaison between the genetic/research and sales teams at JSR has meant that a strategy has been developed whereby animals suitable for this specific Parma ham market.
