Farm-Scape, Episode 2077

Just in time for Nutrition Month in March a new pork recipe brochure is being circulated to consumers in five provinces.

In observance of Nutrition Month provincial pork organizations in Alberta, Saskatchewan, Manitoba, Ontario and Nova Scotia are distributing the recipe brochure, "Healthy Recipes for Busy People."

Manitoba Pork Council Home Economist Marlene McDonald says the brochure was developed in Manitoba and includes time saving tips designed to make meal preparation faster and easier, food safety tips and nutritious pork recipes.

"The brochure includes six recipes, all health oriented recipes including nutritional analysis for each of them. They use a variety of pork cuts.

There's a stew using cubes, there is a pork pad tie using ground pork, a loin roast, cutlets, tenderloin is used in two recipes, a roasted tenderloin with vegetables as well as kind of a stir fry called pork pappercash.

They're quite a variety of flavors using a variety of cuts and ingredients but they're all easy. They can all be prepared quite quickly so they're great for busy people.

The recipes use a minimum of fat and the cuts are all well trimmed. We like to use healthy cooking methods too, whether it's roasting or stir frying or braising. Pork is a low fat food. We like to keep it healthy, add nutritious vegetables as well as seasonings so that you end up with a healthy dish.."

McDonald adds each recipe includes a nutritional analysis which outlines the contents of calories, fat, carbohydrates and protein as well as cholesterol, sodium, potassium and fibre.

The brochures are available in retail stores until March 27 and through the provincial pork organization web sites, including pickpork.com.
