Assistant Professor Dr Tran Dang, head of the health ministry’s food safety and hygiene department, said pork and other cattle meat, if cooked rare, could pass surviving viruses to humans, causing mouth and lip ulcers.

Another expert said infected meat looked normal and recommended eating only well-done meat.

Themed “preventing food contamination”, the conference was organized by Ho Chi Minh City’s Sanitary Institute.
