Parma Ham Production Explored by European Pig Producers

ITALY - Under the topic "Pigs, Parma & Prosciutto - production for unique food brands" Italy was, for the first time, host of the annual European Pig Producers (EPP) Congress earlier this year.

From 22-24 May 2014 more than 260 EPP-Members and some 15 Italian pig farmers and professionals from the pig business paid a visit to Parma in order to hear about, see and taste the production of special food products which are produced under special conditions and for unique markets all over the world in this region.

Pig production in Italy is characterized by strong regulations which are also unique in the world. The pig farmers have to fulfill a lot of requirements regarding feeding and keeping the heavy "Parma Pigs".

The four speakers of the opening day explained in interesting lectures background information about these requirements and also gave an overview from an economical point of view. During the farm visits the participants also had a chance to look into stables and to get in touch with Italian pig farmers.

Besides Parma ham, other specialties coming out of this region include Parma cheese, Prosciutto and Balsamico vinegar. On different tours the Congress attendees took a look at the processing plants where these products are produced and seasoned.

Current information about feed, feeding, animal health, breeding and loose farrowing systems were also provided in additional speeches. All participants left Parma with wider knowledge about production lines under special conditions.

EPP is looking forward to its next gathering within the International Pig Event on 10 November at the eve of EuroTier 2014 in Hannover.
